Easiest dinner idea your kids will love

Here’s an easy dinner idea – it’s not original but sometimes it’s nice to have a new idea for dinner!

Mini Pizzas!

I love this option because I just set out the ingredients and my kids MAKE THE DINNER themselves. They are less likely to complain about it because THEY MADE IT!!

Plus, they have so much fun creating their own pizza.

Luke loves LOTS of pepperoni.

Clark likes LOTS of cheese.

George is very precise and careful.

Paul can eat his weight in pizza.

Only 3 Ingredients required:

  1. Individual Naan Bread (or pita bread or bagels)
  2. Pizza sauce
  3. Shredded Mozzarella Cheese

Other optional ingredients:

  • Pepperoni slices,
  • Sliced Mushrooms,
  • Chopped peppers
  • Olives
  • Pesto
  • Jalapeños

Set whatever ingredients your family enjoys onto the table. Allow everyone to create their masterpiece and bake for 5-6 minutes at 350 degrees.

Dinner is DONE! Enjoy!

Bonding through cooking & eating together

I’ve been ordering from Hello Fresh for several years.  I’ve tried other subscription meal services, but keep coming back to this one. I usually order 1 box every 4-8 weeks.

You can choose from an assortment of meals each week. There’s a vegetarian option, seafood, pork, chicken and/or steak.

The 3 that I chose for this week were:

  • Chimichurri Steak with a Sweet Potato, Poblano, and Tomato Jumble
  • Balsamic Fig Chicken with Sweet Potatoes and Mixed Greens
  • Shrimp Pasta with a Kick with Garlic Herb Butter and Zucchini
Here’s how it works:

Hello Fresh sends me a box of colorful recipe cards and perfectly portioned ingredients, allowing me to prepare a balanced, delicious meal for my family without having to spend the time planning and shopping as much as I normally would.

I love that someone else takes care of all the parts of dinner that I don’t enjoy – especially the DECIDING what to eat! With Hello Fresh, we make and try things we would have never made or tried before.

Here are some reasons why we like Hello Fresh:

#1 :

We get to cook together – spending time side-by-side!

The recipe guide has pictures and instructions that are step-by-step and easy enough for a child to follow. My sons feel great about being able to prepare a delicious meal for the entire family.

#2:

It’s an ADVENTURE!

A cooking adventure of trying and preparing something new and discussing what we like about each meal, and what we want to cook again. We discover foods and recipes we would have never tried if it weren’t for Hello Fresh.

#3:

We all sit down to eat together!!

This is my favorite part of ordering from Hello Fresh. It’s a well-balanced meal that really encourages sitting down and eating together. Hot dogs and chicken nuggets don’t do that – I warm those up and hand them out.

Cooking these delicious Hello Fresh meals has us sitting down and enjoying a meal TOGETHER!!

Many of us know that everyone benefits when we sit down and eat meals as a family.

5 Scientifically-Proven Benefits to

Eating Together as a Family:

  1. Family dinners mean better family relationships
  2. Eating together fosters happy, well-adjusted kids
  3. Eating together helps kids do better in school
  4. Eating together reduces stress
  5. Eating together provides better nutrition
Here’s the rundown about how we felt about each meal:

Chimichurri steak – My boys LOVE steak so this was a hit. I didn’t put the chimichurri sauce on their steak, but I loved it on mine. We all enjoyed the sweet potato medley too!

Balsamic Fig Chicken – Chicken is something we eat on a regular basis, so trying this new recipe was fun and it tasted great!

Shrimp Pasta with a Kick was DE-LICOUS!  Clark and I loved the meal, just as shown in the picture – pasta mixed with shrimp and zucchini. The other boys liked all their items separate, not touching. Ted, not much of a pasta eater – just ate the shrimp and zucchini.

My version – not as pretty as the picture, but definitely tasty!

I order from Hello Fresh to add some variety. To save money, I order the smallest meal size and just add my own ingredients to make enough for 6.

If you’d like to try Hello Fresh, I have a $40 discount for you.

Click here for a $40 discount off your first order!

You do have to log on to Hello Fresh about once every 6-8 weeks to choose your meals or hit “skip.” If you don’t love it, just cancel! It’s easy!

Thanks for reading and happy cooking!

Would you like some ideas about what to talk about with your kids? Here’s a game we play at dinner called: Would You Rather?

Instapot Recipe

My friend Suzanne edited this recipe for the instapot.  She said she used whatever was in her pantry or freezer (such as frozen tomatoes from their garden).

The men in her family smoked their turkey for thanksgiving and the leftovers made a delicious chili!

Ingredients:

  • 2 Tablespoons Olive Oil
  • 1 medium chopped onion
  • 4 cloves minced garlic
  • 4 cups chopped turkey
  • 8 peeled, quartered tomatoes
  • 1 can chili beans (not drained)
  • 1 can black beans drained
  • 1 can navy beans drained
  • 1/3 cup of sliced jalapeños from a jar
  • 1 package Enchilada sauce
  • 1 carton Turkey Bone Broth

Instructions:

  • First mix the enchilada sauce and the turkey broth together and set aside.
  • Set Instapot on sauté to high and immediately add the olive oil
  • Once hot, add onions and garlic.
  • Stir and cook for 3 minutes till softened.
  • Stir in turkey and tomatoes and continue to sauté for 2 more minutes.
  • Now stir in the 3 cans of beans and the jalapeños.
  • Lastly, pour the broth/sauce mixture into the Instapot over the beans and turkey.
  • Cancel sauté setting.
  • Place lid securely on Instapot.
  • Select pressure cook on high for 8 minutes not to release steam.
  • You can either let the Instapot decrease in pressure after cooking (OR) carefully adjust to release steam manually.
  • Remove lid carefully and enjoy your chili!
  • We served ours with cilantro, cheese of choice and sour cream.

Yummy, crispy baked potato recipe

Once again, I can thank my mom for creating a recipe that is absolutely DE-LISH! (Thanks mom!)

My boys devour these potatoes. They make great side to nearly any main dish.

Ingredients:

Small potatoes (red or golden)

Panko crumbs

Olive oil

Butter

Parmesan cheese – grated AND shredded

Salt/pepper or any seasonings you enjoy!

Directions:

Pour 1/2 cup of olive oil in the bottom of a 9 by 12 in baking dish

Put a couple pats of butter in (optional)

Pour in 1/2 cup of grated Parmesan cheese AND

1/2 cup of SHREDDED Parmesan cheese

1/2 cup of Panko Crumbs

Cut potatoes in half and lay down inside oil/parm mixture

Pour a little EEVO on top.

Sprinkle seasoning on top – whatever you want! I usually sprinkle a tiny bit of seasoning salt, some pepper, and garlic powder.

Put in oven and back for about 30 minutes at 375 degrees.

This might take more or less time depending on the size of potatoes you use. Stick them with a fork after about 25 minutes to see how well yours are cooking.

ENJOY!

8 In Colorado/ Colorado Springs/ Family/ Food/ Free stuff/ Memories/ Motherhood/ My Journey/ Peek into our Week/ Raising boys/ Things to do in Colorado

Peek into my week with Mom! (And my traumatic pedicure)

It’s always a good week when Mom’s in town. She only comes to Colorado once a year, so we make the most of our time together when she’s here.

She flew in Tuesday night, and the first thing she got to do was babysit my kids!

WEDNESDAY

I work on Wednesdays and thankfully, she loves to spend time with her grandkids.

That night we went to New Life for the First Wednesday service. It was an incredible night of worship. We went with all four boys – thankfully it’s a relaxed family service, so they got to dance around with their friends. If you live in Colorado Springs, you’ve got to come! It’s the First Wednesday of each month at 6:30 PM.

THURSDAY

Thursday morning Luke had preschool, so mom and I got to go our Mom’s group/Bible study. Up until now, my mom has only participated with the group online, so I loved getting to introduce her to so many of the ladies in person!

Thursday afternoon my mom kindly offered to pay for a pedicure while she watched the kids. (I’ve got a good mom!)

George decorating cookies with Grandma

I went to a salon close by that I’d never been to before. My pedicure was a little uncomfortable … at one point I felt a sharp stab in the corner of my toe. By that night, my toe was swollen.

FRIDAY

Friday my toe was still hurting but I got through the day by wearing comfy shoes. At church that night we baptized about 30 people. I love being a part of those special nights. Two of my sons were baptized a few months ago (I wrote about it here).

All the people getting baptized Friday night came up on the stage for prayer.

SATURDAY

We to the Pioneer Museum and then to LarkBurger for dinner. My mom agreed that their chicken sandwiches and fries are some of the best things she’s ever eaten!

That night, Ted stayed home with the boys and my mom and I went to see The Apostle Paul movie. I wasn’t sure what to expect, but it was a GREAT movie…I recommend you see it! It truly brings the Bible to life and I hope more movies like this are made! There are some frightening parts, so it’s probably best for children 12 and up.

Pioneer Museum

Paul playing at the Pioneer Museum

SUNDAY

We explored Helen Hunt Falls and Cheyenne canyon, then went to Modern Market for dinner. (Kids eat FREE at Modern Market on Sundays!)

Helen Hunt Falls

Toe is still sore – wearing comfy shoes and limping.

MONDAY

The boys took the day off school to spend time with Grandma. We planned to visit Cave of the Winds, but Luke was up sick the night before, my mom wasn’t feeling good, and my foot was only getting worse, so we decided to stay closer to home and hike in the Garden of the Gods. That’s always an amazing place to visit.

Mom and Luke resting

Mom and Luke resting

That afternoon I decided to go back to the nail salon to show them my swelling toe and they told me it was an ingrown toe nail. They soaked it and then DUG at it with a knife. This is the toe that I didn’t want to touch because it was hurting so bad. The lady DUG at it with a knife. And she wouldn’t stop. She kept digging until she got a piece of my toenail free. It hurt so bad I just start crying right there in front of everyone. She squeezed it at the end and asked if it was better. “NO! You just dug at it with a knife – please stop SQUEEZING it!”

TUESDAY

Luke had preschool so mom, and I got to be Tourists in our Town. I got to show her all around town and drop copies of “Climb, Soar, Swim, Soar” off at Terra Verde and the Pioneer Museum who now have them available for sale!   I’ll write about where we ate and what we did in a future post.

Mom and me time!

That night mom watched the boys so Ted and I could go to dinner.

WEDNESDAY

I had to take my mom to the airport. It’s so hard letting her leave because I’m not sure when I’ll see her again. Mom, I love you and visit again soon! Thank you for spending the week with us!

TOE UPDATE:

My toe continued to get worse. I should have gone to the doctor rather than back to the scene of the crime. The lady who was digging at my foot caused a serious infection. My entire foot got so swollen that I couldn’t wear shoes. It hurt to walk. I was putting everything on it to make it heal, but nothing worked so I finally went to the doctor and got antibiotics. The doctor said I could lose my toenail. What was supposed to be a nice, relaxing gesture from my mom – turned into two weeks of severe pain and possibly the loss of my toenail?!  I’m not sure I’ll ever get another pedicure!? Have any of you ever had that happen? I have pictures, but they are really gross. If you want to see a picture – I am going to post some under my review of this nail salon here: YELP REVIEW. https://www.yelp.com/user_details?userid=GrsJ5Nir8YjXaNN91ZzTUg

Thanks for following along on week with mom! I’ll post out our DAY DOWNTOWN soon! Subscribe so you don’t miss a post.

Best places to eat in Colorado Springs

My favorite date nights with Ted include discovering new restaurants!

When we become empty nesters and have more time on our hands, I would love to visit every single restaurant in Colorado Springs (and beyond!).

I could be like Julie in Julie and Julia (I love this movie!)

Julie took a year and cooked her way through Julia Child’s cookbook and wrote about the recipes in her blog.

I could eat my way through Colorado Springs and write about it. And will someone remind me of this in about 15 years when our littlest one is out of the house? Who would like to join me in this future endeavor?!

Also – the year after I try all of the restaurants…

… I will be trying all of the gyms …

… to lose all of the weight!

Anyway …. I haven’t yet tried every restaurant in The Springs. (Not Yet!) But of all the ones we’ve tried so far, here are the ones that keep us coming back.

  1. Cork and Cask – This is an amazing place to come for an appetizer and a drink. The decor is fabulous.

2. Hacienda – Great tex-mex with a fabulous view (if you sit on the top floor).

3. Rabbit Hole – This is an EXPERIENCE! You go down a little staircase in the middle of downtown – and find a delightful restaurant underground!

Dinner with friends at the Rabbit Hole

4. King Chefs Diner – Come wearing your baggy pants because you will be served a BIG breakfast!

This place has two locations. I recommend the original – it’s a tiny castle with only about 20 seats inside. It’s a fun EXPERIENCE! My oldest son loves their burgers (I had a bite and they were amazing!) Another son loves their french toast – it’s delicious too! My favorite thing, though, are their HUGE breakfast burritos smothered in green chili. Food Network called this meal the best breakfast in Colorado and I’d have to agree! (Note – they only accept cash!) Oh, and the coffee is great too!

5. CB Potts – Great burgers (Big Porter Blue is my fav) and a fantastic view!

6. Modern Market – I wrote 7 things I love about this place here.

7. Ivywild – A historic school that has been transformed into several restaurants.

They have a whiskey bar with live music in one section, coffee bar and baked goods in another section, then a full restaurant and brewery in a third section. This place is worth a visit! My seven year old disappeared the last time I was there. I found him sitting at the whiskey bar, chatting with the bartender, snacking on maraschino cherries.

8. Pepper Tree Restaurant -This restaurant served the best steaks I’ve ever tasted in my entire life.

I had one of their signature steaks, and my husband had the filet. They were both amazing. It’s the PERFECT spot for a birthday or anniversary. Dinner for two will cost around $100 (not including appetizers, drinks or dessert), but it is OH so good! You should make a reservation because the dining room is small. The restaurant is unassuming from the outside, but once you get inside, the view is beautiful! I love that they cook your steak right next to your table. I honestly can’t wait to go back. How many more days til my Birthday?

9. Restaurant 1858 (Seven Falls) – Dining at this restaurant is a memorable experience.

Park at the Broadmoor (near The Golden Bee).  The shuttle will take you to Seven Falls.  Enjoy a beautiful walk up to the restaurant.  Some of the delicious food at 1858 is Broadmoor is served in a cast iron skillet like they would have used in 1858! I recommend the Chili Con Queso nachos! They were incredible and made from scratch (homemade wild boar chili, chips, cheese and pickled jalapeños … yum!)  Loved our experience there!

10. Shuga’s-This is a fun little date place. You MUST try the Spicy Brazilian Shrimp soup.

11. Carrabbas Italian Grill – I love trying local, authentic restaurants but I keep coming back to this place.

I love the warm bread with the oil (and that special seasoning). I love their house salad. And the chicken marsala just melts in your mouth and has SO much flavor. I’ve ordered the marsala dishes at so many other places and it’s never the same. I’m getting hungry just typing this. Something handy we occasionally use is their carside carryout. I order online, drive up, they bring it out to my car!   If you eat here, sign up for the Dine Rewards Program. You get 50% off every fourth visit.

12. The Broadmoor Hotel – There are many places to visit at this Historic Hotel.. and each is special for different reasons.

    1. The Broadmoor Brunch is an EVENT and so delicious! The Sunday brunch is about 50 dollars per person, but there’s a similar brunch on Saturday for half the price.
    2. The Golden Bee – Come for the good Irish food, stay for the “sing-a-long” – lyrics provided!

We Love our Veterans! 50 options for free food and drinks!

I’ve been trying to teach my boys that we value and respect our military – both those who are serving and those who have served.

A couple of SIMPLE ways to do that:

  • THANK those we see in uniform.
  • Stop what we are doing when we hear the national anthem, put our hands on our hearts and face the flag. During this time we reflect on our gratitude for our country and for the men and women who serve to protect it.

This summer my kids were outside playing when suddenly, the national anthem starting at Air Force Academy and we could hear it from our driveway. My son, Clark – age 7 at the time, stopped all of his friends from playing and showed them what to do when the national anthem is played. Afterwards, he explained why we do this.

I had to quickly take a picture as I stood with them because I didn’t want to forget this precious moment. Thank you to each of you who serve or have served!

One person I’m especially grateful for is my father-in-law, Kevin, who retired from the Air Force. Here he a man of honor and I’m glad to have him as my father-in-law and a Papa to my four sons. Here they last week, stopping once again to show honor during the National Anthem.

World’s Best Kale Salad

My mom offered to make a Kale salad while staying at my house a couple of years ago.

“Oh…kay,” I said hesitantly. I didn’t like Kale. I had already tried it in salad and baked as chips and just couldn’t eat it. That is, UNTIL I tried THIS salad. This salad made me totally changed my mind about Kale. This is seriously the WORLD’S BEST KALE SALAD! Created by my mom, Rebecca Bornman! Thanks mom!

Kale salad recipe:

1 bag Kale from (elephant or rougher Kale, not soft, baby Kale)

1-2 chopped Green onion – optional

½ cup cranberry

½ cup chopped almond
