Easy Recipe Alert: Chicken and Gravy – Yum!

I discovered this recipe on Instagram some time ago and recently had the chance to make it. It’s perfect for serving a large group or for preparing a thoughtful meal to share with a family in need. It was a hit with all my boys, and what I particularly appreciate is how effortlessly it came together.

Ingredients:

2 lbs of chicken (I used frozen chicken breast)

1 can of cream of chicken soup

2 cups of chicken broth

2 packets of powdered Gravy mix

Noodles (or mashed potatoes)

.

What to do:

Put the broth, soup and gravy powder into the crockpot.

Set the frozen chicken on top.

Cook on low for 4 hours.

Cook the noodles (or mashed potatoes) before serving. In my opinion, the mashed potatoes with the chicken and gravy are SO delicious – I’m a mashed potato lover. However the noodles are much easier and faster to make. If you have the time, make the potatoes, if you are in a hurry or want to save the time and effort, the noodles work great.

The World’s Best Winter Recipe: Creamy, Spicy, Comforting Chicken Enchilada Soup

In the face of sub-zero temperatures and battling a bout of illness, I opted to prepare this soup, and it turned out to be the absolute BEST decision. Crafted with a comforting chicken broth foundation and elevated by the invigorating spice of enchilada sauce, it managed to be both soothing and delightfully zesty.

.

Ever since I made the first pot, I’ve been craving more. It stores well in the fridge, so I recommend you make a large pot and savor it all week long.

.

It tastes better being sipped from my favorite mug. A gift from my sister, who knows I love giraffes!

.

Ingredients:

  • Olive oil and/or 1 TB of Butter
  • 1 chopped sweet onion
  • 1 chopped pepper (I used red)
  • 1 chopped jalapeno
  • 5 cups of broth
  • 2 cans/jars of enchilada sauce
  • 1 can of corn (drained)
  • 1 can of black beans (drained)
  • 1 cup of chunky salsa
  • 8 oz. of cream cheese
  • 1 cup shredded cheese (I used sharp cheddar)
  • 1 TB of garlic
  • 2 cups of shredded chicken
    • I used a rotisserie chicken, then boiled the bones to make the broth
    • Leave this out or serve on the side for a vegetarian option
  • 1 TB cajun seasoning or whatever seasonings you want to use
  • 1 t of cumin (optional)
  • Splash of hot sauce (optional)

Optional toppings:

  • tortilla chips,
  • sour cream,
  • avocado,
  • cheese,
  • a drizzle of hot sauce, or
  • diced jalapenos.

.

Directions:

Start by sautéing the onion, peppers and garlic in a drizzle of olive oil and a pat of butter.

After 3-5 minutes, add the broth, enchilada sauce, corn, beans and salsa. Bring to a boil, then let simmer about 10-15 minutes. Add seasoning.

Add the cheeses and chicken and stir.

Serve in mugs or bowls.

Caprese Kebabs Recipe

.

I love this snack so much.  Caprese is the absolute perfect combination of flavors. The juicy tomatoes, the savory basil, the soft mozzarella cheese, and the sweet balsamic glaze. Yum!

For guests, I’ll make the cute little kebabs. When it’s just for me, I’ll eat it ‘deconstructed’ in a bowl.

It’s a quick, easy, healthy and delicious snack. What more could you ask for?

What you need:

All the supplies can be found at Target.

.

What to do:

Caprese Salad: Put the mozzarella, tomato and basil in a bowl. Drizzle the balsamic glaze on top. Add salt and pepper and olive oil if you’d like.

.

Caprese Kebabs:

If you want them a little fancier for guests, make bite-sized kebabs. Take a toothpick, add one tomato, a strip of basil, and a piece of mozzarella.

Line these up on a pretty dish. Drizzle balsamic glaze on top. Salt, pepper, and olive oil are optional.

Christmas on the Stove Top

Who loves the smell of Christmas?

I’ve got this potpourri simmering on my stove right now, and I WISH you could smell it through the screen.

My boys asked with delight: WHAT are you making? My answer didn’t thrill them.

You can share the delightful scent of Christmas with friends and family by making them a bag of Stovetop Potpourri.

I made these for my sons’ teachers (and attached a Target gift card – which is what they REALLY want!)

Here is what you’ll need to make the potpourri:

  • Cinnamon Sticks: You can find these in the baking or Christmas aisle.
  • Cranberries: They sell bags of these in produce.
  • Oranges: If you plan to used slices, buy large oranges. If not, clementines fit well inside the small bags.
  • Pine: I cut some from a tree in my yard.
  • Plastic Baggies: I found these at the Dollar Tree, Hobby Lobby sells them too.
  • Red Ribbon: In the gifting aisle or Hobby Lobby.
  • Labels: Linked here and below.

Inside each bag, place an entire orange (or dried slices), about a half cup of cranberries, 1-2 sprigs of pine, and 2 cinnamon sticks.

Tie the bag with ribbon and add a tag.

Last year, to save time, I just put a clementine in each bag. This year, I bought oranges and dried them. If you want to make these pretty orange slices, here’s how to do it.

How to Make Oven-Dried Orange Slices:

  1. Preheat oven to 175° F. 
  2. Slice oranges about ⅛-inch thick. 
  3. Set slices in a single layer on baking sheets with wire racks (this will allow oranges to dry on both sides). 
  4. Cook for 4-6 hours, until dry to the touch. You may want to rotate halfway through for even cooking.
  5. Cool completely.

Christmas on your stove:

  1. Add 4 cups of water to a saucepan or slow cooker.
  2. Add a sliced orange, 2 cinnamon sticks, 1/2 cup cranberries, and some fresh pine to the water.
  3. Simmer on the stovetop or in a slow cooker. Check the water every hour or two, adding more as needed.
  4. Enjoy the scents of the season!

Delicious & Simple Crockpot Thai Chicken and Rice

I like simple dinner ideas and thought you might like one too! All you need is 4 ingredients and about 4 minutes to get dinner in the crockpot for your family.

Ingredients:

  • 4 lbs of Chicken (frozen or thawed). You can use chicken tenders, thighs, or chicken breasts.
  • 1 cup of Rice – I used Jasmine rice.

Directions:


1. Add chicken, salsa and coconut milk to crockpot and stir.

2. Cook on low for 5-6 hours or cook on high for about 1 3/4 to 2 hours. These times are APPROXIMATE and I encourage you to check on and stir your chicken regularly.

3. When chicken is finished cooking, remove it from the crock pot.

4. Add a cup of rice to the remaining liquid and cook on high for 45 minutes, stirring occasionally.

Enjoy!

For a similar dish with a Mexican twist, add regular salsa and cream cheese instead of the Thai salsa and coconut milk.

Game Day Recipe: Bacon and Cheese Stuffed Jalapeño Poppers

Here’s one of my favorite game day snacks!

Here’s what you need:

Ingredients

(this can be doubled!)
  • 6-7 jalapeños
  • 1/2 cup Shredded Cheese (a little extra is always ok!)
  • 4 oz cream cheese
  • 3/4 t Seasoning Salt
  • 1-2 pieces of bacon (When I know I’m making poppers, I make some bacon for breakfast and set aside a piece or two for later)

Instructions:

Preheat oven to 350 degrees.

Spray cookie sheet with cooking spray or spread bacon grease on pan.

Cut the tops off the jalapeño. Slice jalapeños in half and remove all seeds. Lay jalapeños on cookie sheet.

Chop bacon into bits.

In a microwave safe bowl, add 4 oz of cream. Warm in microwave for about 15 seconds so that the cream cheese becomes soft and is easier to mix.

Add the shredded cheese, bacon bits, and seasoning salt. Mix well.

Spoon into jalapenos.

Bake for about 15 minutes.

Take them out of the oven, throw a little extra cheese on top, bake for 5 extra minutes.

Simple Salt Dough Snowman Ornaments: DIY Christmas Gifts

Here’s a fun and simple activity to do with your kids: Salt dough ornaments.

My boys aren’t always into crafty things – but when they heard their cousins made and SOLD some of their ornaments, my boys were all in! They always love a way to earn money – right now they are saving up to buy a DOG! (This was their idea, not mine)

The salt dough recipe is simple:

  • 2 cups of flour
  • 1 cup of salt
  • 1 cup of water
  • Mix with a wisk, and then your hands.
  • Flour a surface, then roll out the dough until it’s about a quarter inch thick
  • Cut into shapes
  • Use a drinking straw to poke a hole at the top of the ornament for the string to go through

To make the Snowman Ornament:

  • Use a cup to make circles
  • Take a little piece of the dough and form it into the shape of a carrot
  • Press the nose on top of the circle
  • Press divots in the dough for the eyes and mouth. I used the bottom of a paint brush.
  • Bake at 175 degrees for 3 hours.
  • Let them sit for 1 hour.
  • Paint with acrylic paint or water colors.
  • Seal with Modge Podge.
  • Tie a string through the hole.
  • Hang on your tree, gift wrap, or sell.

The boys put their earnings in this jar and tied one of their dog bone salt dough ornaments around it!

Delicious Holiday Appetizer: Pecan Cinnamon Roll Brie

This recipe was an accident that turned out delicious.

I was planning to make a croissant-wrapped Brie, but when I opened the fridge, I only had cinnamon rolls. So … why not?

The crunchy and salty pecans, the gooey, warm cheese cheese and the soft, sweet bread create a party in your mouth.

Ingredients:

  • Pillsburry Cinnamon Rolls
  • Brie cheese
  • Pecans

What to do:

  1. Open the cinnamon rolls.
  2. Roll them out
  3. Set a brie ring on top of the rolled out rolls
  4. Sprinkle pecans on top of the Brie
  5. Wrap up the Brie
  6. Put more pecans on top
  7. Bake for 15 minutes at 350 degrees
  8. After you take it out of the oven, pour icing on top
  9. Enjoy!

Got Tomatoes? Make Gazpacho!

The first time I ordered Gazpacho was almost 25 years ago. It was a cold, rainy day, and all I wanted was some warm soup. I ordered Gazpacho, not realizing that this was a COLD soup! I was living in Florida, so cold soup is a good idea most days of the year, but this was NOT one of those days. I wanted something warm. When I tasted the soup, I thought I was being pranked, or that the kitchen had messed up – why was this soup cold? I wasn’t expecting it and didn’t enjoy it.

However, now that I’m familiar with Gazpacho, I’ve grown fond of this soup. I’ve even been craving it this summer. It’s bright and refreshing, full of fresh, crunchy vegetables and perfect on a hot day – and it’s been hot here in Minnesota – about 15 degrees above normal for this time of year. The tomatoes I planted in May are finally ripening, and my neighbor brought over cucumbers from her garden. I used those two ingredients and a few more to make this delicious, refreshing Gazpacho Soup.

Ingredients:

  • 1 round tomato, or two Romas – most seeds removed
  • 1/2 red onion
  • 2 small peppers or one regular size
  • 1/2 cucumber, most seeds removed
  • 1-3 slices of Jalapeño, depending on your heat preference
  • 1-2 T of olive oil
  • 2-3 T of vinegar – either Balsamic, Wine, Sherry or Apple Cider
  • 1 tsp of Cumin
  • Salt/Pepper

Put everything in a blender or food processor.

Pour into one or two bowls. Crumble up some white bread or a croissant roll and add to the bowl. Allow the bread to seep for several minutes before eating.

A Simple and Delicious Salsa Recipe

Oh yum! This is the easiest and most delicious recipe. I’ve made this several times to give it away – but my kids and I eat it before it gets delivered. I suppose I need to make bigger batches.

Ingredients:

  • 1 – 14 ounce can of stewed tomatoes
  • 1 fresh jalapeño (remove stem and seeds)
  • 1/2 onion
  • 1 bunch of fresh cilantro – stems removed
  • Juice from 1/2 Lime
  • 1 tsp Garlic powder
  • Salt/Pepper

Directions:

Throw everything in a blender and pulse 5 to 7 times – done!

I love to eat this salsa with lime chips. It’s also good on eggs or tacos.

Money Saving Tip: Buy the ingredients from Aldi and make this batch for only $1.35
