A healthy and delicious snack: Loaded Hummus

Here’s a cool and delicious recipe for a warm day:

Loaded Hummus!

What you need:

  • 1 lb Sabra Hummus (plain or red pepper hummus for a little extra flavor)
  • 1/2 cup chopped cucumbers
  • 1/2 cup chopped Kalamata olives
  • 1/2 cup Feta
  • 1/2 cup chopped tomato
  • Pita Chips

What you do:

  • Choose a large plate/dish.
  • Spread the hummus evenly around the plate.
  • Sprinkle feta on top.
  • Sprinkle the olives, tomato and cucumber on top.
  • Serve with pita chips, pita bread or naan bread.

Easiest dinner idea your kids will love

Here’s an easy dinner idea – it’s not original but sometimes it’s nice to have a new idea for dinner!

Mini Pizzas!

I love this option because I just set out the ingredients and my kids MAKE THE DINNER themselves. They are less likely to complain about it because THEY MADE IT!!

Plus, they have so much fun creating their own pizza.

Luke loves LOTS of pepperoni.

Clark likes LOTS of cheese.

George is very precise and careful.

Paul can eat his weight in pizza.

Only 3 Ingredients required:

  1. Individual Naan Bread (or pita bread or bagels)
  2. Pizza sauce
  3. Shredded Mozzarella Cheese

Other optional ingredients:

  • Pepperoni slices,
  • Sliced Mushrooms,
  • Chopped peppers
  • Olives
  • Pesto
  • Jalapeños

Set whatever ingredients your family enjoys onto the table. Allow everyone to create their masterpiece and bake for 5-6 minutes at 350 degrees.

Dinner is DONE! Enjoy!

EASY 2 ingredient Granola Bar Recipe

Here’s a recipe for the world’s EASIEST homemade granola bars that requires only TWO Ingredients:

·3 cups old fashioned oats

·1 can sweetened condensed milk

That’s it! Pop in the oven and bake for 20 minutes at 350 degrees.

HOWEVER, if you want to get fancy….here are some OPTIONAL ingredients you could consider adding:

·1/4 tsp. salt

·1/3 cup ground flax seed

·1/3 cup sliced almonds

1 scoop of protein powder

·1/2 cup peanut butter

· chocolate chips

·cinnamon

·dried fruit

·coconut

·chocolate (1 tbsp. cocoa powder)

Instructions:

1. Preheat oven to 350.

2. Mix all ingredients together thoroughly.

(If using peanut butter, melt in microwave for a few seconds first. Mix in and let cool before adding any chocolate chips.)

3. Spray a 9×9 pan.

4. Pour mixed filling in the pan.

5. Bake for 20-22 minutes.

6. Let cool and cut into bars.

7. Store in the refrigerator for up to two weeks.

Chicken (or Turkey) Enchilada Chili

Crockpot recipe:

Ingredients:

  • 2-3 frozen chicken breasts (or leftover turkey!)
  • 2 – 10-ounce cans of enchilada sauce (or one large can)
  • One can of corn
  • One can of black beans (drained)
  • One can of pinto beans (drained)
  • One can of great northern beans (drained)
  • One can of diced tomatoes
  • 2 cups of chicken broth (turkey or vegetable broth will work too)
  • One small red onion- chopped finely
  • One green or red pepper – chopped
  • 2T chopped chilies in adobo sauce
  • 1 T garlic
  • 1 T chili powder
  • 1 T cumin
  • 1 T salt
  • 1 T pepper

Optional ingredients:

  • Half a cup of fresh cilantro
  • 4 corn tortillas, cut into very small pieces

What do to:

  1. Put two or three frozen chicken breast at the bottom of a crockpot. Pour all of the other ingredients into the crockpot. Stir.
  2. Cook on low for eight hours or high for four hours.
  3. Remove chicken breast, shred with two forks. Put the chicken back in, stir again.  Put the chicken back in, add a half cup of whole milk or cream. Stir again.
  4. Serve topped with any or all of the items listed:
    • cheese, 
    • sour cream,
    • crushed tortilla chips,
    • jalapenos

*Optional: Use some of that leftover turkey!

First, add all the ingredients to the Crockpot (except chicken or turkey). Cook on high for about an hour, then add some of your leftover turkey (shredded or chopped in small pieces). Cook on low for about an hour. Add cream, stir, and serve!

Want the vegetarian version? Leave the chicken and turkey out!

Instapot Recipe

My friend Suzanne edited this recipe for the instapot.  She said she used whatever was in her pantry or freezer (such as frozen tomatoes from their garden).

The men in her family smoked their turkey for thanksgiving and the leftovers made a delicious chili!

Ingredients:

  • 2 Tablespoons Olive Oil
  • 1 medium chopped onion
  • 4 cloves minced garlic
  • 4 cups chopped turkey
  • 8 peeled, quartered tomatoes
  • 1 can chili beans (not drained)
  • 1 can black beans drained
  • 1 can navy beans drained
  • 1/3 cup of sliced jalapeños from a jar
  • 1 package Enchilada sauce
  • 1 carton Turkey Bone Broth

Instructions:

  • First mix the enchilada sauce and the turkey broth together and set aside.
  • Set Instapot on sauté to high and immediately add the olive oil
  • Once hot, add onions and garlic.
  • Stir and cook for 3 minutes till softened.
  • Stir in turkey and tomatoes and continue to sauté for 2 more minutes.
  • Now stir in the 3 cans of beans and the jalapeños.
  • Lastly, pour the broth/sauce mixture into the Instapot over the beans and turkey.
  • Cancel sauté setting.
  • Place lid securely on Instapot.
  • Select pressure cook on high for 8 minutes not to release steam.
  • You can either let the Instapot decrease in pressure after cooking (OR) carefully adjust to release steam manually.
  • Remove lid carefully and enjoy your chili!
  • We served ours with cilantro, cheese of choice and sour cream.

Yummy, crispy baked potato recipe

Once again, I can thank my mom for creating a recipe that is absolutely DE-LISH! (Thanks mom!)

My boys devour these potatoes. They make great side to nearly any main dish.

Ingredients:

Small potatoes (red or golden)

Panko crumbs

Olive oil

Butter

Parmesan cheese – grated AND shredded

Salt/pepper or any seasonings you enjoy!

Directions:

Pour 1/2 cup of olive oil in the bottom of a 9 by 12 in baking dish

Put a couple pats of butter in (optional)

Pour in 1/2 cup of grated Parmesan cheese AND

1/2 cup of SHREDDED Parmesan cheese

1/2 cup of Panko Crumbs

Cut potatoes in half and lay down inside oil/parm mixture

Pour a little EEVO on top.

Sprinkle seasoning on top – whatever you want! I usually sprinkle a tiny bit of seasoning salt, some pepper, and garlic powder.

Put in oven and back for about 30 minutes at 375 degrees.

This might take more or less time depending on the size of potatoes you use. Stick them with a fork after about 25 minutes to see how well yours are cooking.

FIVE DOLLAR DINNER!

That’s what we had tonight and I just had to tell you about it!

Here’s how we spent so little on this dinner:

Pasta Sauce was on sale for $1 per jar

Spaghetti Noodles: $1

Turkey Meat: 1 Lb for only $1.50*

Loaf of bread: $0.50 **

Garlic Butter topping (See recipe below): Less than $1

Total: Dinner for 5 hungry men = Less than $5!!!

*When grocery shopping, look for meat that is on sale. King Soopers/Kroger was selling 1 pound packages of turkey for $1.50 because they were about to expire. I bought several packages and put them in my freezer.

**Did you know that Jimmy Johns sells day old bread only $.50 per loaf? We get these on a regular basis to make subs at home, or for garlic bread, egg casseroles, etc. They can be frozen too!

 

GARLIC BREAD:

  • 1/2 stick butter
  • 1/2 cup parmesan cheese
  • 1 TB garlic
  • 1 TB Italian Seasoning
  • Thick slices from a loaf of bread

Soften butter, add other ingredients and mix.

Spread a thick layer on each slice of bread. Toast in oven for about 5 minutes. Enjoy!

Pi Day – My Favorite Savory Pie Recipe!

Happy Pi Day (3.14)!!!  To celebrate, I’m sharing a super easy Chicken Pot Pie Recipe that you can make for your family. I just made a double batch of this over the weekend – half for my family, and half for a friend who just had a baby!

I didn’t create this recipe, Shauna Niequist shared it many years ago and I’ve been making it ever since because it’s SO easy and really good. She calls it “The Michigander.”  You probably have most of these ingredients on hand and could make it tonight! Let me know what you think.

 

 

The Michigander – aka Chicken Pot Pie

  • One or two 10 ¾ oz cans Cream of Anything soup (Cream of Chicken, Celery, potato, mushroom, Cheddar Cheese soup.)
  • One cup milk
  • Two cups shredded cheese
  • 2 – 12 1/2 oz cans of chicken  (Yes, canned chicken or rotisserie chicken)
  • Frozen veggies – whatever you like – I use peas, carrots, corn, a little spinach
  • 1-2 Cans of biscuits or crescent rolls

Mix the soup, the milk, cheese, and the chicken. (Mix in some frozen veggies)

Pour into a 9×13 pan. Bake at 350 for 10 minutes.

Place a can or two of biscuits on top. Bake an additional 15 minutes.

Amazing Salad Dressing Recipe!

My husband is so easy to feed. Most nights he just wants a salad with some veggies and protein on top. I wished I could eat salad every night.

Recently, I’ve been making my own salad dressings. I realized if I have a dressing I love, I really do want to eat salad every night!

Here is my latest and favorite… It’s my version of a Caeser salad dressing:

  • 1/2 lemon squeezed into a bowl
  • 1/2 cup mayo
  • 1/2 c olive oil
  • 2 Tb of Vinegar (White or balsamic – whatever you have on hand, I like Balsamic better)
  • 1/3 c parmesan cheese
  • 1 Tb of Worcester
  • 1 TB of Mustard (I use Dijon)
  • 1 t of Pepper
  • 1 t of Garlic powder
  • A sprinkle of salt or seasoned salt

I stir all of that together and put into a glass jar. This makes me want to eat salad all day long.

World’s Best Kale Salad

My mom offered to make a Kale salad while staying at my house a couple of years ago.

“Oh…kay,” I said hesitantly. I didn’t like Kale. I had already tried it in salad and baked as chips and just couldn’t eat it. That is, UNTIL I tried THIS salad. This salad made me totally changed my mind about Kale. This is seriously the WORLD’S BEST KALE SALAD! Created by my mom, Rebecca Bornman! Thanks mom!

Kale salad recipe:

1 bag Kale from (elephant or rougher Kale, not soft, baby Kale)

1-2 chopped Green onion – optional

½ cup cranberry

½ cup chopped almond

½ cup blue cheese (or gorgonzola)

Dressing:

½ cup of OLIVE OIL

lime juice from one lime

½ cup parm cheese

2 Tb honey

Chop the Kale and take out any stems.

Mix the dressing.

Throw all the ingredients on top of the Kale.

Pour the dressing on top, throw on a little salt/pepper or whatever seasoning you have on hand, mix well and enjoy!

Hello Fresh! My completely honest review.

About a year ago, my mom sent me a coupon code for savings towards my first order of Hello Fresh!

I decided to give it a try, and we LIKED it!  The meals were conveniently packaged together with really simple instructions. We enjoyed the three meals we picked. I’ve continued to order about once a month since our first box. Hello Fresh makes it easy to cook meals from home that my family will eat and ask for again!

To save some money, I order the meals for two people, then buy some of the same ingredients at the store and to triple the recipe.

Here are the PROS and CONS.

PROS:

  • 90% of the meals are excellent
  • Easy to follow recipes that your kids can help make.
  • I’ve found new foods (and vegetables) that my kids LOVE!
  • Convenient!  All the ingredients you need for dinner in one container.
  • Saves money because I COOK instead of pick up dinner.
  • Healthier than fast food.
  • Nice variety of meals to choose from.
  • Great customer service.
  • Simple recipes/instructions that your 10 year old can follow to cook dinner for the family!
  • They send an email at the end of the week and ask you to complete a short survey giving feedback about each meal you ordered. If you complete the quick survey, your name is entered into a drawing for free meals.

CONS:

  • A little pricey – about $10 per person.
  • Subscription service – You will automatically get meals and get charged if you don’t get online and “Skip” the weekly delivery. I get online about once a month to look at all of the meals and decide when I want to order and when I want to skip.
  • You still have to cook. Doesn’t come pre-made.
  • 10% of the meals are just ‘okay.’
  • About 1 out of 10 vegetables is not super fresh.
